Menu Plan Monday ~ April 23, 2012

This week is all about new recipes and experimenting. And reconnecting with my friends.

Yesterday I noticed we had a bag of apples that have just been sitting there… untouched for a week. So I made Betty Crocker’s Apple Oven Pancake for breakfast, apple chips and applesauce. I haven’t attempted any of those before. I’m off to a good start 😀

I’ve started making weekly cooking goals. Some weeks it’s as simple as making pancakes from scratch. Whatever goal I choose is something I’ve never done before. This week: pesto.

I’ve always wanted to make pesto but could never find enough basil… I found it!

Monday (Theme Night: Green!)
Supper: Pesto pasta, pesto grilled cheese sandwich, zucchini and yellow squash sauteed in butter and garlic

Supper: Jaid has Campus Life tonight so I’ll probably head out for supper with friends.

Supper: Springtime Spinach Salad, PLTs (pastrami, lettuce, tomato with chipolte mayo as seen on Diners, Drive Ins and Dives)

Supper:  Chili Rellenos, potatoe oles
*I’m winging the Chili Rellenos: roast, skin, stuff with cheese, wrap in eggroll wrapper and fry in oil. That should work, right?

Supper: A good friend of mine is moving from Montana to Omaha. He’s resting here in Lincoln before he has to unpack so I decided to make him my favorite dinner… Pork Chops Paprikash, roasted zuchinni and squash, homemade applesauce

Saturday (Theme Night: Cheese!)
Lunch: Homemade pizza
Supper: Three-Cheese Noodle Bake, Parmesan asparagus, cottage cheese
